Meatloaf Wellington 2 lbs. Ground Beef ---------- 3 Eggs 1 cup Bread crumbs 2-3 Carrots 3 stalks Celery 1 Tbsp Garlic 1 tsp. Salt 1 tsp. Black pepper ---------- 1 pkg Frozen, puff pastry Optional: Mushroom soup or BBQ sauce for glaze. Pre-heat oven to 350 F. 1. Add middle ingredients to food processor and chop fine. 2. Turn out into bowl and mix with meat. Probably want to mash together with your fingers. 3. Form into a loaf pan or a long rope on broiler pan (broiler is real messy afterward). 4. Bake at 350 for about 30 minutes. Cool for an hour or overnight in frig. 1. Lay out 4 pastry sheets and roll to make one. 2. Place a section of the meatloaf in the pastry. [I covered the top with BBQ sauce]. 3. Add a mushroom glaze and roll up the sheet to cover. 3. Cut slits in the pastry for steam to escape. 4. Bake at 350 for 30-40 minutes until golden.
