Macaroni Salad with Thai Peanut Sauce 1 lb. dry Macaroni 5 Tbsp. Peanut butter (smooth or crunky) 1 cup coconut milk pinch Curry powder 1 tsp. chopped, Lemongrass pinch Salt pinch Black Pepper bunch Scallions, chopped large Slice, Ginger, chopped 1 Tbsp. Garlic, mashed 1 tsp. Chinese chili paste 1 Tbsp. Oil --------------------------------- 1. Boil macaroni according to label directions. 2. While macaroni is cooking, in a small saucepan, add the oil and heat. Add Garlic, ginger, and lemongrass. Heat until fragrant, about 2 minutes. 3. Add peanut butter. Slowly add coconut milk and stir frequently. Add everything else and heat until well incorporated. 4. Drain macaroni and add the sauce. Tastes best when made the night before.
