Alan’s Slaw 1 med Red cabbage 1 med Green cabbage 6 oz shredded carrots ---- 1 cup Vinegar (red, white, raspberry, rice, or combo) 1/2 cup Olive oil 1/2 cup vegetable oil 1 tbsp Sesame oil 3 tbsp Marsala wine 1 tsp pepper flakes 1 tsp Bitters 1/2 cup Brown sugar few slices candied ginger, crumbled few drops Tabasco or other pepper sauce A few days ahead, make the dressing. Combined liquid ingredients, sugar, ginger, and peppers in a small saucepan. Bring to a boil and stir frequently. Pour into a container with a tight lid. Refrigerate for one to three days. Shred or chop cabbage and combine with carrots. Drain the sauce mixture into the cabbage mix. Chill for several hours or overnight. I find making it about 2 days ahead and letting the flavors come together the best. Serves a picnic or 12 hungry friends. Alan Barasch © 8/21/2000 http://www.barasch.com/food/
