Alan’s Mom’s Sweet Potatoes 2 lg. cans Sweet Potato chunks 2 cans Pineapple chunks 1/2 cup brown sugar 1 tsp Allspice 1 tsp Cinnamon 1/2 tsp Nutmeg Orange juice Drain pineapple into measuring cup. Add enough orange juice to come to 1 cup. Put potatoes and pineapple in oven-proof pan to make one layer. Preheat oven to 400. Mix rest of ingedients with juice mixture. Pour over potatoes. Bake for 30 minutes. ------------- New Variation 12/25/2001: Only had 1 can of pineapple so substituted 1 small can of mandarin oranges and added tablespoon of Pomegranate paste. ------------- Options: I added cloves to mine but Mom wanted ground cloves that I did not have.
