Cranberry Apricot Surprise 1 bag, fresh Cranberries 2 cups Sugar 2 cups Dried Apricots 2 cups Water or other liquid 1 Tbsp. Cinnamon 1 Tbsp. Chopped Ginger 1 Tbsp. Vanilla extract ================== 1. In saucepan, bring 1 cup of water and 1 cup of sugar to a boil. Add cranberries. Reduce heat and cook until they begin to pop. Pour out into a large mixing bowl. 2. Bring other cup of water and sugar to boil. Add apricots, spices, and extract. Cook until soft; about 15 minutes. 3. Chop apricot mixture in food processor for a few seconds (rough chop, not pureé). 4. Add the apricot mixture to the cranberries and mix well. Place in refrigerator for several days. About 12 servings at a large Thanksgiving dinner.
