Balsamic Pearl Onions 1 gallon water in large pot 3 lbs.............Pearl or Boiler onions 1 cup.............red Wine 1/2 cup...........soy sauce 1/2 cup...........Balsamic Vinegar 3 Tbsp............extra virgin Olive Oil 3 Tbsp............Honey 1 Tbsp............Garlic, chopped 1/2 cup...........Mushroom broth (not creamy) 2 bunches.........Scallions 1 bunch...........Cilantro, fresh 1 tsp.............Sugar ------------------------------- 1. Boil onions in water for about 5 minutes. Set aside to cool. 2. Combine wine, vinegar, honey, olive oil, and garlic in small pan. Bring to a boil. Preheat oven to 450 F. 3. Cut root end off onions and they will squirt out into your baking dish. 4. Pour boiled mix over onions. Add the mushroom soup, scallions, and cilantro. 5. Bake for about 30 minutes; stirring half way thru and sprinkle sugar to carmellize. Serves 12 as a side dish. Excellent warm, hot, or room temperature.
